My issue with the factory hooks and soft shackles- the radius it puts on the soft shackle is too acute of an angle, increasing the probability of something snapping.
So- is the spring weird? Or is the axle out of center?? If the axle is 1/2” off center to the jeep sticking out the passenger side- the track bar needs to be shortened.
Is the shop saying it is perfectly aligned because both front and rear are equally sticking out??

I can only speak for OEM sensors. (Swapped wheels and tires with a buy back jeep and liked the black wheels better…)
Both jeeps picked up the new sensors as soon as they were turned on.
So whatever set of wheels you get for the larger tires- I’d stick factory...
Have you considered water injection or water methanol injection?

The fuel tank is small… we usually get 400 miles per tank in town and 460/470 miles per tank on the highway.
Calibrate the Speedo- I missed a post. Guessing jumped to 37” tires?
I would still expect 350mpt in own and 390-400 on highway.
