33s on 18" wheels

How do 33" tires on 18" wheels work? Specifically, 285/65/R18 tires. Looking at the tire size comparison to the stock 245/75/R17 there is an inch increase overall and about a 20% increase in width.

I am mostly concerned how they handle off-road, in non-rock crawling conditions. Dirt trails up mountains are the environment I'm looking to be in.
