I'm wiring up an ARB twin out of the bed. Do I need to run the ground all the way back to the battery (-) or can I just tap into one of the ground points above the spare?

No, going to a frame ground or other factory ground point is fine. No reason to waste wire running the ground all the way back to the battery, as long as you make a good connection.
