It could be that I finally narrowed it down. Although these two tires are different in their usage profile, I have found on YouTube and other Jeep forums that these two tires are often compared. For me, it comes down to weight; my JT has 3:73 gears, that's not going to change anytime soon, but I'd like to run a 35". I was pretty set on the Nitto's, but now I see they are a bit heavier than the Coopers.
Per each manufacture's website:
Nitto Ridge Grappler: LT315/70R17 = 70.83lbs.
Cooper Discovery STT Pro: LT315/70R17 = 67lbs.

Many say the on-road noise difference is negligible between the two which seems hard to believe considering how aggressive the Cooper's look.
What's your experience with either of these on your Jeep?

Why not BFG's KO2s, they weight 65lbs a piece. About the lightest 35 you can buy and are as good if not better than the Coopers or Nittos. I know they are quieter than the Nittos for sure because I've ran them before as well. Can't speak for the Coopers because I've never ran the SST but did run some A/T coopers on XJ about 9yrs ago that were great and quiet.

I'm no tire expert, but like you, I did my due diligence prior to changing my tires out - I also have the 3.73 gears. I kept the OEM Overland wheel and went with NItto Ridge Grapplers (285/75/18). Very happy with them so far - no humming when going down the freeway, I'm still hitting 8th gear regularly (adjusted with a Tazer, of course), still averaging ~19 MPG (it's my daily driver, mostly freeway to work), and they haven't disappointed when I take it off road. Mine are also rated at 70 lbs.
