How much credence should I put into those calculations? Summer ‘21 I’ll be making some changes, lift, 37’s, etc. running that calculation, difference between the stock 32’s with 3.73, and 37’s on 4.10 I’ll get slightly lower ratios than I currently have. I constantly read and hear that I should run a 4.56 to 4.88, which really lowers my ratios. How do these calculation equate to real world? Should I be especially concerned with going lower than 4.10 if I’m mostly commuting/overlanding with an occasional Rubicon thrown in?

its pretty accurate. a 37 with 4.56 is pretty close to a stock tire on 4.1. 37 on 4.1 is close to stock tire on 3.73.

I personally wouldnt go taller than 4.88 with a 37. youre going to want the gear to help move the weight/rotational mass of the bigger tire. Hell, Im doing 4.88's on 35's.

Not a big deal if you stay in Florida all the time, but you'll want the gearing if you hit even the appalachins, imo. Especially if you have a trailer or a load/passengers. Its better to end up with a little short gear than you need than the other way around.
