Because then it would be a lot less stiff. Instead of being less stiff for a couple of inches at the ends it would be less stiff along the entire length with the result of it being a lot more springy/bendy. But the whole bar is probably overkill anyway, like you said, and for bragging rights, as ShadowsPapa said.
A lot is going to depend on intended use - and tire size. Get up to 40" tires, there's a heck of a lot of force acting in different ways.

Your explanation of the why that bar is how it is sound spot-on to me. Less chance of bow in extreme conditions and forces.
