I’ve done it 3 times and still trying to perfect it. Way better than the store bought every time but I’m a perfectionist when it comes to cooking. I’m my worst critic.

I’ve done it 3 times and still trying to perfect it. Way better than the store bought every time but I’m a perfectionist when it comes to cooking. I’m my worst critic.
I love pastrami and corned beef pretty much equally and I understand that pastrami is technically a different cut of meat. Having said that, when I make my pastrami I soak my corned beef overnight, pat it dry, rub the entire surface with mustard, then pack on the restaurant grind black pepper. Smoke with mesquite until internal temp is 160. Pan of water helps keep the steam going with the smoke.
Works for me and none of the critics, I mean guys at work, have ever complained.

I'm limited to the kinds of alcohol I can buy here in Alabama. The state controls what's available for purchase here ☹
I'll look for some of that next time I get to Florida or Kentucky

Unless you live in the mountains, most of us North Carolinians do not get a ton of snow... So, when you do, you have to take advantage of it. These are from around midnight last night -- took my boys sledding as well as the JTR, and dogs out to play in the snow.
