So other than aesthetics, what needs to be taken into account when making decisions for changing rims?

For example, I currently have the stock Rubi rims. 17 inches etc. I prefer more sidewall and smaller rim in general and I saw someone mention that going too large on rims (say 20’s) is not good if you do any off-roading.

if I decide to keep 17’s (or is switching to 15’s a better thing?) is there a benefit to say steelys over stock?

With new wheels, your concerns are the specs. Backspacing/offset, diameter, and width. The right backspacing/offset provides room for the inner sidewalls. And you either want the tires tucked under the flares or you want them to stick out (the kids call this poke). You want the right diameter for your use. 17s give you more sidewall flex than 20s allowing the tires to grip better. For the width, determine what size tires you want and go from there. If you want the common 12.50 wide tires, ideally you use at least an 8" wide wheel.

15s won't clear your brakes.

Cheap steel wheels are a downgrade from stock. They're heavier. They're sometimes not round, more often than alloys. They require more weight to balance.
