The Starlink RV setup is really your best choice for now.
Before we got fiber last summer I had us on a Mofi Router with a $57/month Verizon SIM that I bought on Ebay from some guy who sells them on grandfathered unlimited data plans.
I installed an external directional antenna (Proxicast) and used Google Earth to aim it at the tower some miles away.
It's a little tricky for Verizon, but pretty much plug n play for an ATT account.
If it's Verizon you have to go into the router and tweak a few things. Nothing really difficult. Just slightly tedious.
Off-peak we'd get 50/50
On-peak it could drop as low as 12/20. The uploads generally would be as high or higher than the downloads, because the tower is synchronous, and most users are of course downloading.
The seller gives you all of the information you need on setting up the router and the Prepaid account.
It worked pretty good for us for several years before rural fiber got to us.
