Shock upgrade from Launch Edition advice?

I have a 2021 Sport S (California Edition) that I added Launch Edition springs and Fox shocks to. Were these basically the same as Rubicon takeoffs? I like the height and I like the ride most of the time, but there is one particular angled bump I hit going to and from work that creates a suspension movement I don't like. Unloaded, it just feels like the front shocks are topping out too quickly (as if there isn't much rebound damping). The front wheels feel like they vibrate up and down for just a moment, then all is fine. With a couple hundred extra pounds in the truck, I hit that piece of road and it feels like I'm riding a wave for a few moments front to back and side to side. Not sure how else to describe it. It rolls and pitches.

I don't want more lift and I don't need super expensive off road reservoir shocks. Considering Bilstein 5100 0-1" . Any others you've tried?

What you've described seems to be similar to complaints from those who have added the Rubi take-offs. I've had Rubi take-offs now for over a year and I find your description to be pretty close to mine.

Just cruising down the road I'm happy with them, but if I hit a large enough bump the front seems to take the impact well, while the back is very stiff and an abrupt rebound. Turning out of our neighborhood the road curves and has a large crown into it so turning left you hit it at an angle and the truck rolls side to side and seems to pogo like a wave in a pool for a second or two. It's very uncomfortable and I'm also looking at replacing the shocks with something else. From what I've seen Bilstein 5100 or Rancho 9000 seem to be the most recommended lower cost shocks for the stock suspension and Rubi springs.

I've also read the Fox 2.0s are better, but I've been reluctant to look at them too hard as they seem to be what the Rubicon branded Fox shocks are based on. I'm not an expert on shocks by any means though.

Bilstein 5100 are fairly firm. Have you used them before?

I have them on mine with 2.5" Clayton springs. I think they ride pretty good, but that's a pretty subjective opinion.
