Probably not via Bluetooth (or at least not very high quality/reliable). Most streaming wireless cameras will do it over Wi-Fi or some proprietary connection/frequency. Most, if not all, dash cams have live streaming functionality. GoPro and other action cams also have streaming, which also gives you the benefit of moving around based on what you need it for.

Bluetooth isn't really designed for video transmision, wifi would really be your only option to stream directly to your phone.

it would probably be easier to just get a multi camera system that comes with a display and wired or wirelss cameras.

I have the IA Jl3001 HU, so my current plan for this is to get something like this video switcher https://catalog.pac-audio.com/catalog/safety-camera-integration/vs41

and send the output to the IA so I don't need a separate display.

It may be better with newer stuff, but the Gopro streaming via the phone app I've tried is pretty delayed. I'm not sure that would work well for a trailcam application

Garmin has a line of battery and hard-wired cameras that are designed to link up to tablets- especially the Overlander. I think the overlander can link to 8 or 16 simultaneously, so people mount them on the under body, etc.
