Just got back from a weekend at Colonial Williamsburg. Ended up at 20.8 MPG. That included driving around Williamsburg and the 4 hour trip each way. On the highway I used the ACC and tried not to go above 70 MPH.

Are you hand calculating or looking at the dash gauge? My dash gauge is off by 2mpg every time. I don't know of a way to correct it. On my F-150 there was a way to go into the settings and correct it so it was accurate for you vehicle to match your hand calculations.
Check the radio settings. I forgot the exact one, but if you check where it mentions the temperature and other unit settings it's set to UK gallons from the factory. It might not correct it 100% but might get it closer to real numbers.
