I deleted my 60% seat and love it. No where near as nice looking as yours, but used extruded bars and a piece of plywood bolted in using the seat bolts. Keep my 55L fridge there when traveling. Also a good way to free up some payload if you don't need the seat.
I had the same experience with mine. Wobbly stock, then upgraded the suspension and drives straight and corners great, even with my cabover. With a little wider stance/tires and it rails.

A midsize with a high payload package would be interesting. A current LC70 tows about the same as a JT, but has a ~2900lbs payload. Who knows how Australia qualifies payload vs the US though, and my 05' LJ has more creature comforts (ie weight) than a LC70.

Oh man, a factory Aussie style flatbed on a factory JTR would have my money and be very unique in the market. Flip down sides, underbed storage boxes and sometimes a better departure angle. Way wider bed platform too.
