Looking at the instructions it does appear that the gray plug is what would have gone into the factory socket, so that is what you would want to cut off.

You could do that, but to me you are still losing a high amperage output that you might be able to use down the road for something that actually needs it.

For me anyway, the primary advantage to using the splitter is not having to cut into the factory harness.

That socket you linked to from Amazon has a 10' lead, so unless you are trying to put the socket in the bed that's all the wiring you need. Just get a couple of butt splices, cut off the male connector and you are in business, and you still have the fused 10a tap to hardwire something else
