I was worried about clearance to the Mojave skid plate but it was a perfect fit, no grinding or modification needed, not sure about the Rubi one.

Also, pull up the rebate form that has to be mailed in off the website and check everything that has to be sent in. I almost threw away the box before I realized you need the UPC sticker off the box for the rebate! Duh.
Should be no reason you can't install in the cold. Nothing chemical related such as adhesive tape or the like. All mechanical bolt-on. Although you may be cursing those z-hooks with your cold hands.
