I ordered a Rubicon on 2/28 with manual, hardtop, switches and tow package. I also have a VIN and no build sheet. I think you're right that manual is slowing it down.
Did you check the status with Jeep Chat during your wait? If so did they show it moving along?

I've had luck recovering a problematic USB-C connector by cleaning it out with a toothpick and compressed air. I find lint accumulates in the bottom and prevents some cables from fully seating.
Did you get an extended warranty? I'm wondering how that's handled at Gupton. Is it a given price or is there a negotiation? Are there any other last minute decisions to make at pickup?
