Of all the covers I have put on trucks I always added a weather strip along the top of the front of the bed (see red arrow). Might be something else to try if you take it off again. Pics from mine below.
2.5 will be better for your use case. Pictures here with 35 inch tires in a 2.5 vs a 3.5 before I put the 37's on it. At a 3.5 MetalCloak I had to start considering front drive shaft changes, etc.

My 2022 JTR came with 33’s. 4:10’s.
I went to 35’s and noticed minimal mpg change…about 1 mpg difference. Power didn’t change taking off or on highway. Ride I thought was actually better.

It took everyone coming together to overcome it. Receiving 2 ration books and standing in line to receive their distributions. Retooling factories (the ones we have still)…etc…. Everyone had to contribute. Amazing.
I don’t think you’ll have any problem towing 1,600 lb sail boat and trailer or a utility trailer with your jeep. Get the quality hitch if you’re gonna spend the money and enjoy your truck. You’re gonna have blast!
