I bought mine used and it came with a Mopar 2" lift. I have read that if you have the dealership install this lift it does not void the warranty. But I could be mistaken. Easy enough to find out though by calling them.
Welcome and congratulations. Running a 2.5" lift with 35s will not be an issue with the 3.73 gears, IMO.
I know many will say you "have to regear", but I say not necessarily.

Try WD to get them off and spray with Fluid Film. Wipe off excess. I've been treating the undercarriage with FF on my old JKU and now my JT. No rust through Nebraska winters

Interestingly, Shadeidea is the brand I have and it uses bungees with a plastic ball to wrap the bungee loop on. They do not need to add attachment points the one shown.
I don't think that would pose a problem Sunrider mounting points. Now I just have to muster up the courage to $pend the money...

What tire are you running? If BFG, they are known to run smaller than advertised and shouldn't be a problem.
The tire may clear the trackbar but diameter can also be issue between the fame rails & heat shield
