I took a similar approach, and after speaking with the staff at Discount Tire, mounted a 315/70/17 on my spare. I have 285/75/18s mounted on the Overland rim, so the difference is negligible - 1% different on the diameter, but 10% difference on the width (which is the one I'm not so worried about).
I'm no tire expert, but like you, I did my due diligence prior to changing my tires out - I also have the 3.73 gears. I kept the OEM Overland wheel and went with NItto Ridge Grapplers (285/75/18). Very happy with them so far - no humming when going down the freeway, I'm still hitting 8th gear...
I second this - I'm also doing Nitto Ridge Grappler 285/75/18s on the OEM Overland wheel, and I specifically told the guys at Discount I didn't want to hear any humming when I took the top off. So far, so good.
Glad someone else pointed this out - yes, many areas in the NE corner (Navajo Nation) are still closed off to visitors, so definitely check/plan ahead.

Yup - I've been on Girl Scout Cookie duty for WEEKS now (help pick up supplies, set up cookie booths, carry cookies/signs/tables/shade canopies/etc.), and throwing everything in the back of the JT is oh so easy.
