I attempted to just give a line of why someone may look at each trim. You are right though, it does end up being judge-y.
Interesting idea. Of course chosen options will blur these lines but as for starting points, here's my input:
TRIMS:
Sport: want as manual/basic as possible
Willy's Sport: want as manual/basic as possible, but a few physical upgrades (rails, LSD, wheels/tires)
Sport S: want comfort options...
Agreed it's loud. I carry cheap in-ear plugs cause after about 20mins at 60mph+ my ears do hurt. I don't care how dumb I look.
Besides that it's great. Keep legs/feet in cause rocks and bugs hurt. Drive more defensively then you normally would cause you have much less protection.
that actually exists at my dealer now, it's kinda cool but there is a part JT's can not go on without a lift as it's too high of an angle up and down. Was built in the before time of JT's.

The dealership I go to is building it's own stand alone Jeep store/dealer. It's across the street but supposed to have it's own service and 100% Jeep. Supposed to be open by end of this year.

I've read that somewhere. I love the idea of this, but not if it means I can't take the full roof off.
Mine was also installed from dealer on my ordered JT. They tried to add in a charge for it but before I signed anything my first question was why our agreed total was up $400. I was guessing it was taxes or something that had changed in the new year.

Happens to me when it's super cold out.
Also had it happen when the rear wasn't tight enough. So if it's no super cold where you live, might check the bolts. A few could use another turn tighter.

Never owning a truck before, or a camper like this, I'd say the JT does decent pulling it. Max Tow with no lift, 285/70/17...
