I drove my first Gladiator for over 4.5 years and put 57k miles on it. Never had any issues with the cooling system, and did not add any coolant during that time.
Using anything other than AGM batteries requires a charge controller for the battery. Some Lithium batteries have it built-in to the battery. Temperature is a big issue for Lithium type batteries. If it gets too hot or too cold, they don't function properly or they fail.

The OEM batteries are crap. You did well to get the three years out of them. The maintainer kept them from dying sooner. Using the maintainer should help get a longer life out of the new batteries.
Replace the Main Battery. You should have replaced it with the Aux Battery. They are paralleled together all the time, except during the startup test and during ESS events. The failing Main Battery is draining the new Aux Battery.
