2021 Gladiator Rubicon Overriding ESS - What does IBS do?

Hello all,
Just replaced my main battery due to starting issues. Had it checked it was bad which I assumed as it was the original battery. I have had a Taser hooked up the last 3 years (to program 35-inch tires in the speedo. I unmarried it and unhooked before I pulled the battery.
Anyway, I decided that I would pull the 42 fuse and neg cable to eliminate/override the ESS battery. Note I have had the ESS shut off since I put the Taser in.

So, issue - I have been trying to figure out which Neg cable based on multiple forums and YouTube videos etc. I tried a couple different configurations because my ESS service notes and light stayed on. I think I screwed something up as now my radio / temp control only has high or low not actual temp controls? Everything else is normal and now ESS service or light.
I hooked everything back up including the fuse but still the same with the temp control. Note it highlights in blue now as well.

Sorry for the long explanation. Any help is appreciated.

What's your battery setup look like?

Same as the pic except my winch connected to the left side negative with stud. Been that way for almost 4 years
