Welcome - there are some generic websites like Northridge, Quadatrec, Xterme Terrian, or you can just use google type what you want and normally add after it "jeep gladiator forums" and then read the thread that pops up. - I would recommend - google search "Your color" Jeep Gladiator Club - and I bet there is a forum thread where other Jeepers with your color post their rigs and you can ask them Qs if you like what you see and they will point ya in direction. It sounds like you already have a good list. One of the best ways to decide what fits your needs is drive it around a bit to see what is missing and see what others have. The side bars or steps mostly mount the same way so the style depends on what you are going to do with it and if you like more of a street appearance where stock type running boards or knockoff version may suit you or those that have a loop that drops down at each door or more offroad appearance stock rock rails. I like the Body armor rock rails or the generic version barricade advanced rubi rails to use as a step without loss of ground clearance they stick out to protect the sides from rocks and bushes and also defend the doors a bit in parking lots. The power steps are cool if you need a step and do not want them to hang down while driving the price is the only real downside some have a lifetime warranty. As mentioned there is no limit to what is available sometimes making it hard to decide.

As mentioned above, drive it a little before getting too caught up in accessories. Anything lacking will become apparent quickly and looking at other peoples JT will show you things you hadn't even thought about. This past week I've been removing things from a 4 year old Gladiator to put on a newer one I just bought. Because I followed this advice when it was given to me, there were very few things on the last Jeep that I regret buying.

Looking at your list, the most important to me is side steps and doors off mirrors but everyone will be different. I bought a hood deflector shorty after getting my Jeep back in 2022 but had to have the hood repainted about a year and a half later. I never put it back on and the hood is still pristine. Something I've always believed about door sill protectors is that they are a waste of money on a new vehicle. Once I've worn through the paint, a new one at that point makes more sense because then it covers the ugly spot. Not saying my idea is correct but that's what I do. To me, the safest first purchases with a new Jeep is a key fob cover and a tray for your center console. Reason being that the flip key button always gets activated with the key in my pocket. The extra thickness of the cover mostly keeps that from happening. A console tray gives you a little extra storage space and I also use a gear shift organizer tray. It doesn't hold a lot but every little bit helps

Also FYI anything you remove from your rig is someone else’s treasure so it can be sold for cash

I have the same vehicle. Added mount for cell phone, radar detector, and GoPro. Pneumatic hood lift. Cold air intake. Neoprene seat covers. Recovery kit. Tube doors with mirrors and wall storage brackets.
Rear backup lights to replace the bumper reflectors. Bed mat. Roll bar grab handles as my wife is kinda short. Roof lift.
Came with a winch so I bought a cover for it.
How much do you want to spend becomes the main question.

For side step rock rails, check out the Rock Slide Engineering step sliders:
https://www.northridge4x4.com/part/...00-jt4-rock-slide-engineering-step-slider-kit

They're on the higher side of price for steps, however that 12" drop down step is worth every penny, especially if you have kids or a wife on the shorter side.

They also make an up-armor kit if you are planning on hitting the BIG trails:
