I just took delivery of a 2021 sport s max tow.

Going to be installing clayton 2.5 ride rite lift.

The rims i am looking at come in 2 flavors and im not sure which one i need to buy

37" Toyo AT3 tires

Fuel Siege

18"x9" with a +1 offset and 5.04 backspacing.
or
18"x9" with a -12 offset and 4.53 backspacing

Which configuration do i need or what is the difference?

First, you can ignore backspacing, as offset has replaced it as a specification.
The stock Sport/Sport S wheel has a 45(?)mm offset, and is a 7½" wide wheel. As you go wider with the wheel, you can effectively subtract 13mm for each inch from the stock offset, so a 9" wheel will yield an effective offset of 25mm for an wheel position the same as stock.
So the +1 offset will put the wheel about an inch further out, and the -12 will move the wheel about 1½" out.
Depending on how wide the tire is, you may want the lower offset to avoid rubbing.
