For the LE through my dealer here in NC it was 3k non refundable..

Why would you need to put a deposit down if it’s refundable ? That’s insane .

A deposit is a commitment to buy .
Because it still helps keep away tire-kickers and minimizes wasted time and effort for the salesmen? Besides, non-refundable deposits are still refundable by law in most states. Putting it on a credit card makes it even easier, even if the dealer refuses.

500 non refundable. Dealer said FCA guidance was 1000 but he always did 500 and was not going to do different just for the gladiator.

In certain states dealers can't keep your deposit even if you cancel last minute. CA is one of them.
Also, it's really up to your dealer how much they want to charge for a deposit, but states do have rules for that too.
I've had to put down a $5K deposit in the past, but it was refundable and I actually ended up canceling on that car and got my money back within about 4 days. So unless your state has laws prohibiting it, there is no "Standard" deposit.
