That's a common theme. I've got to say, Having lived with Tuxmats through last winter, I'll never buy WeatherTech again as long as they have one that fits my vehicle.
I love mine and now I'll probably get these for every vehicle going forward. Never heard of them until a random post on here Second purchase for the JT.

I picked up the OEM ones right away, but 2 things bothered me on them:

1. The logo and mats look great, but the mats are relatively flat (no elevated ridges), so if there is water in the mat, your pant leg is probably also sitting in it (I don't drive in the rain with the top off, so no need to pull any plugs and I get to preserve my original carpeting).

2. Since they are relatively flat, there is a small elevated portion where the mats snap into the prong on the floor. Since this was the only area where the mat is elevated, it felt like I was always stepping on a marble or something if I shifted my feet around on the mat.

I ended up going with the Rugged Ridge, which have elevated ridges to keep your pants out of any water in the tray, and the ridge is consistent across the mat. My 2 complaints with the OEM solved.
About 2, when you remove the plug in the carpet (it’s mostly cut but they left a tit at either end), the rubber one in the floor of the body, the mat passes through the carpet of the Jeep then you take the rubber one and it fits in the mat. The mat becomes pitched and directs water/debris towards the drain.

Do you leave the plug out all winter, or only when you want to drain the mats?

Once you cut the carpet, notice any additional road noise?

Weird question….if you get the oem Jeep All Weather mats do you have to use the drain plugs?
The drains stick out pretty far, you should cut them off if you don't want to use them. The drain in the early version for the JL didn't seal to the floor and allowed water to leak into the cab when driving through deep water, so many cut the drain off and didn't use it. I just installed the sound assassin with the armorlite on my JT and the side trim keeps popping back out. I'm hoping that it will settle in for a better fit but if I had to to it again, I would probably not have the sound assassin go all the way to the edge to help provide some room fir the trim.

The carpet you throw aside, the floor drain plug stays in the AW mat till you want to drain/wash it out. No noticeable difference in road noise. In the design they anticipate Water intrusion, to the cab, the floors are pitched to strategically placed drains throughout and placed rubber grommets/plugs in the body.

In my JK I noticed the floors were wet, pulled all the plugs threw aside laid carpet back down and never had an issue again.

The pictures above provide clarity.

On the MOPAR site, they have the Jeep mats and it looks as if the back ones are one solid piece, not 2 that snap together. It also says they are for the 21-23 Gladiator, others sites say 20-22 Gladiator, so maybe they made some changes and new models?

I had a 2020 and now a 2022 - can't see any difference in the floor areas.

Is there a noticeable difference in the noise. I have noticed that my wildpeaks as they have gotten more miles on them 30,000 seem to be getting nosier

Yes, and as Benny has said in the past, the years don't always get updated properly or expediently on web sites so may be off or inaccurate.
I ran across a site selling Jeep lights that did a copy and past when they came out with a JT part - it said Wrangler in some spots in their description and when I went to the Wrangler part - I could tell it was a copy that wasn't properly updated.
