I’m looking for a pair of front springs to give me around 3 inches of actual lift (2.75-3.25). Will the 2” Mopar coils do it? I know most coils are rated for how much lift they give a Rubicon

I bought a set of used Teraflex 3" springs from a member here to replace my 3" RC Spacers and they sit about a half inch taller than the spacers did.

The amount of lift a spring gives to a vehicle will vary with the rate of the spring of course, but the weight of the truck as well.
A good example is that some have seen less than 1" of lift using certain part number Rubicon springs under their truck while others have seen MORE than 1" of lift.
"Around 3" " is as close as you'll ever get - could vary from 2.5" to 3.5"
1" synergy front springs put my Overland (with steel bumper, winch, winch plate and 2" receiver up front) back to stock height while instead of 1" of added lift beyond that, 2" springs gave me 1.75" of lift over the 1" springs. I expected since the 1" put it back up to stock height, they'd lift t an additional 1" instead of over 1.5".

You'll need to expand your expectations from 2.75-3.25 to more like 2.5-3.5, IMO.
In your case, I'd bet the Synergy 3" springs would get you really close to that 3"
