Given the same of very similar tread, does one behave preferentially on dry, wet or snowy roads?

IMO the wider a tire is the worse it performs in wet and snow, they also follow grooves more on the highway. I prefer a 11.5” or 285 wide tire for all around use and daily driving.

Narrow tires do better on snow. Even the tire sites suggest that. Because the weight is concentrated and you don't float on the snow, you bit into it.

I was intending to run the 37/11.50r18 ridge grappler as a daily/long trip setup but there were issues with this plan

only 2-3 wheels I found with 4.75“ backspacing in the 18x8 Width and that’s the widest I’d run in case I need to air down wherever I am
I really prefer the look of a 4” or more narrower wheel vs tire and there are no 7.5s at all which would leave with the only alternative being a 2” spacer and a refinished overland wheel yielding too much offset amd requiring my off-road setup to also use a wheel spacer

theyre also an odd size which means I’m spending another $100/tire to get them and likely making a wait for replacement longer and there’s also the chance they drop that size
