I have 3k inverters in my Ram and Gladiator, they both work fine for running coffee pots, blow driers, and charging power stations.

I'm certain I never, ever come close to maxing them.
Coffee pots and blow dryers will be rated 1500 watts or less. You aren't taxing them at all.

I could just get a larger Bluetti rated for that and keep it charged off the Gladiator 12V system.

Yep!! I’ve toyed with the idea of a Bluetti or similiar that has a 30A outlet and running it to an RV style outlet on the side of the Jeep below the rear door. Then I could use one of those cool 30A to 4 standard outlet cords and run everything for camping.

Again, you can do it, but you are talking longer use, deeper drain on a more constant schedule than most ever use winches.
Winches aren't used several times a week (well, for most anyway), maybe not even several times a month.
Don't expect the charging system to keep up, your batteries will need some help recovering and the more you cycle them, the faster they lose capacity and life. An occasional winch use is just that - a withdrawal now and then, rarely, not every day, every week.
Don't look at your wife's hair dryer...my wife's draws 1950W on high. Of course the bathroom gfci is on a dedicated 20A circuit as are the counter outlets in the kitchen, the gfci in the garage, etc by both choice and code. The dishwasher and disposal are each on a 20A circuit on that split receptacle. There's several outlets capable of 2,400 watts right there. I'd have no issues running the dog dryer or hair dryer while the engine is running off a 3kW inverter personally. Well below the 240A alternators output and only ~42% of my winches peak draw of 400A. Not sure how long the dryer would be running, but I'm sure the 5 minutes I'd imagine wouldn't be an issue at all.

You are talking 20 amp circuits which a "standard" outlet is not rated for.
The standard outlet where most would use a dryer... in the bathroom, is 20A. And maybe you don't let the dogs in the house and use the utility sink in the garage... which also has a 20A outlet. My point was I wouldn't be at all surprised that the dryer draws 1800 watts.

1800 watts, 125 volts, 15 amps.
The difference between a 15 amp outlet and the 20 amp outlet - the cross-wise prong has the heavier connector inside.
The vertical slots are basically the same in the two - 15 and 20 amp, rated for 15 amps.

The receptacles are made that way so the neutral can be flipped horizontal on the appliances that draw 1900W+. This is done so they can't be plugged into a 15A receptacle but any lower watt appliance can be plugged into the 20A receptacle. Some of the larger coffe/espresso machines draw 2000+ Watts and come with the proper plug so the unknowing buyer doesn't plug it into the 15A outlet in their new bedroom coffee bar they saw in Pinterest.

I use a 100amp lithium battery, 30amp ac charger, 2000w inverter in this milk crate for portable power. I have an extra 100 amp battery to bring along if needed. This keeps it portable for boat and camping. I charge with Honda generator and folding solar panels depending on application. yes the wiring is a mess but works great! I even have a small fan for cooling when charging and remote monitor.

Well since the Gladiator is a truck…….. 600Ah 12v with 3k output. Ac-DC charger with a 10 gauge extension cord to charge once power comes back. And it’s even portable!!!! Kinda. Good luck lifting it into the bed without a forklift.
