Does anyone know how many square feet of sound deadening material I would need for the knee panel speaker pods ?

I just did that mod--the pods are bigger than I thought they would be, but I would think 1 square foot for each side would do it. Certainly no more than 3 square feet total for the two pods. I bought the replacement pods through Crutchfield and used 6.5" speakers. I did not add sound-deadening material, but I did use polyfill. The mod definitely brought more bass punch forward in the soundstage with much less distortion. The factory fronts are small and distort easily.

I would grab this, too--you can use the large foam ring to guide more of the sound through the speaker opening so that not so much is lost behind the dash (there's a big gap between the speaker and the factory grill).

Here is a guide to replacing those pods WITHOUT having to take apart the entire dash. It works. It's a bitch to get past the obtrusive metal bar on the driver's side (you'll know what I mean when you get there) but it can be done. Saved me hours of work. Just be careful when prying the dash out from the bottom that you don't crease any plastic.

I pulled the dash off for a Stage 6 Quart install. I already had the 6x9's in and the rest of it took me less than 6 hours including a one hour rain delay. I had the drivers side pod out in about an hour and the pass side in about 30 minutes.
