Is there anything wrong upshifting into 7th or 8th on a flat stretch of road to to help maximize fuel economy? Basically I'll be on a stretch of road without many stops on my way home from work at varying speeds between 40-50. A lot of time I like to bump it into 8th and then back to auto to help lower the rpms while maintaining 8th and maximizing fuel economy.

I guess - can this hurt the transmission overtime?

I'd worry more about damaging the engine, too much load at too low an RPM is lugging it.
It may be running at or above idle speed but at idle there is no load on the engine.

It's been discussed a bit. Opinions vary, and some even said it would damage the transmission. Others say not.
I have tinkered with it, and at the end of the day, the savings are negligible.
I stopped doing it because the oil pressure stays pretty low when you're not letting it rev a little higher now and then, and these things need oil pumped into the top end, so I'm thinking that an occasional increase in PSI is doing more good than harm.

Also keep in mind that the engine and transmission are tuned to work together, to deliver the most efficient power when it's needed, and an increase in RPM's may make things a little less stressful on the marriage.
