Also, the Brake Locking Differential (BLD) is not an option but part of the traction control system. It essentially uses the brakes to force torque through the wheels with traction. It’s great in a pinch and worlds ahead of anything in the JKs, but I wouldn’t recommend relying on it for extended rock crawling.
Very useful information brother, good for a rookie like me

Just based on what your stated goals are I would recommend the Overland. If you are new to off road it is likely that your idea of mild to moderate would describe some of the paths I have taken to get to the off road trails. I happened to swing by Rebel right after they took delivery of their Overland. We had a pretty good discussion about why they went that route. They had been building up their JL Rubicon and found that when they changed out the axles and removed the front sway bar they had troubles with the computer looking for them. I don't really think you are looking in that direction but I also don't get the feeling you will need a Rubicon. Putting a lift and a good set of tires on will likely get you anywhere you want to go and then some. And down the road, you can always do more. Trust me when I say a Jeep build is never done.
As mentioned, the full time 4wd is the way to go. It has been available in the JL Sahara and several other models and is well spoken of. Something I recommend to anyone no matter the trim level is spring for the Auxiliary switches. And I mean from the factory. If you have them added they still work but it won't have the same pre-installed wiring that makes it worth it.
Lastly, look at all the options and get what you want. Plenty of people on here wishing they had this or that. Probably the most common of those is the proximity entry.
And lastly, don't overlook the Sport Max Tow. I have not heard of one person that has been disappointed with the Katzkin leather. Of course you can't get all of the options in the Sport but they opened it up a lot since I got mine. Like being able to get the 8.4 screen. And the Max Tow has the 4.10 axle ratio and wider axles. I don't know if you can get the full time 4wd there though. Probably not what you are looking for but I still think it is the best bang for your buck for a lot of people.

I WISH I had the full-time 4H or 4 wheel drive option in my 2020. I'd have jumped all over that living in Iowa with our storms - snow here, not there, calm and sunny, 10 miles up a blizzard, clear driving then spots of black ice and so on.

The basic transfer case has 4L or 4 wheel drive, low range, 4H or 4 wheel drive high range (normal speed) and 2H - or 2 wheel drive. This version the 4 wheel drive modes are NOT to be used on dry pavement or where the wheels can't slip.
The newer version available for 2021 models include a full-time 4 wheel drive option like my Grand Cherokees always had, and even my Chevy truck had. My F250 had the part time 4 wheel drive only. Drive it in 4 wheel drive on dry pavement and you can cause issues, bind things up.
Why not just keep it in 4wd if you aren't turning corners, or in 2wd and let traction control aid in case of traction loss?

Who are some of the users on here with overland builds that I can look at?
Mine is a Sahara, which is the same as an Overland, with Selec-Trac and rear LSD. Last week it got a Mopar 2” lift, 35” tires and 17x8.5 alloy wheels. Yesterday it got a YETI adjustable track bar and JKS Flex Connect swaybar links installed.

She was virtually unstoppable in the snow; I expect it to be more so now.

Music to my ears bro ?? This is the type of stuff I want to hear. Tacoma was my dream truck when I was younger and then the gladiator came out and everything changed.
I bought an Overland because I don't need the crawling on rocks stuff, I wanted leather, heated heated seats, and a nice stereo. It was over 10,000 less than a Rubicon and since it was wasn't a Rubicon, I think they let up on the price more. I got 9k off the sticker. I did change out a few things and I love this truck. I just went to the mountains last weekend and it snowed like crazy. I could not tell I was driving in all of it. Later on they got another 6 inches of snow.

Yup, Same low gear ratio as the sport. To be clear though, the truck is still in 2wd by default and only engages the front axle if the computer senses a loss in traction. I don’t have any experience with this system, but I think they’ve been doing it for awhile in other vehicles.

Chevy has done that for many years.
Also in certain other Jeep vehicles.

When you are going up one of the hills on I80, doing only about 55, and your rear end starts coming up to meet you, you wish it had the same t-case my Chevy had, or what my wife's GC has. I've had both types over many years and there's no comparison.

I never had that experience with my Chevy or any of my wife's Grand Cherokees. They'll walk right up anything. My JT was sliding and I never detected it trying to help.
Traction control did nothing. The back end swung out and I had to let up hard and work to get it back. It was spooky because of the other traffic surrounding me, some of them having trouble keeping control.
My guess is that both wheels were spinning - or maybe simply sliding sideways. (LSD is also not your friend in those cases)

Comparing my F250 to my Silverado - that Chevy truck was superior on Iowa roads in winter, even just in our long driveway.
MAYBE the Ford would have been better in some conditions, but the Chevy was far far more sure-footed for sure.
I've tried leaving in 4H, I could feel the JT rumble and "wind-up" after a bit of dry road. And I had to shift into 2H to take the exit ramp to get onto I35 from I80 as it's a tight curve and the truck didn't like it. Then back into 4H again after a bit....... still back and forth. The new t-case option would negate some of that. There are few straight roads here, even the highways wind and twist quite a bit.

overland + max tow + whatever else you want + AEV dual sport and 35's = exactly what it sounds like you need and want at the best bang-for-buck ratio you'll get. AEV lift should be fully mopar warranty approved as well.

I take my Overland Off-road all the time and mine is completely stock down to the all season tires. It probably has more capability than you'd care to use.
Thank you for that - no opportunities around here to even test it unless I want to piss off a farmer and tear up their fields LOL. I could go down by the river but that's all sand and silt and Iowa muck that people could disappear into and not be found for 2,000 years.

Sadly you can’t get Max Tow on the Overland. I wish you could, as that would perfectly meet my needs.
