1.75" spacers with stock backspaced wheels and 12.5" tires works out just right IMO. These are Rubicon 17" stock wheels, same backspace as Overland I believe.

I'd have to do the math, but to keep scrub radius under control, with WIDER tires, you'd also need to move things out a bit to keep the intersection near the center of the tire.
But to set them out with stock tires, or tires under the stock width makes no sense, geometry-wise.

Overland and Rubicon use the same backspace- I was comparing numbers when looking at "Rubicon take-offs" for my Overland. Makes sense in the math of things.

Just right for what? Do they prevent rubbing, how much do the tires extend beyond the fenders?

You shouldn't need spacers for that size tire but nothing against it if you want to throw them on. I am running 1.75" spacers on mine and as long as you get a Hub centric good brand you will be fine. I've ran spacers on 3 different Jeep's over the past 20yrs and never had a issue. If you go any size higher you will require spacers or wheels with more offset to keep the tire from rubbing the lower control arms. The overlands and regular sports don't have the wide track axles.

As far as PSI,.it all depends on how much weight you have added to your JT and the tire. Different brands might be softer than other brands, a lot of factors to consider. You can chalk test it or just run whatever you feel like feels the best. I've always came out pretty good by playing it by feel and I've always gotten a lot of good miles out of my tires.

I wouldn't run any spacer, I do not think you need it to fit those tires. A spacer will push the tire outside the fender.
I am going to run spacers as that is the look I am wanting.

Yes, I believe the backspacing is the same.
