Tires are 35x12.5r17s and the poke is minimal in the rear, but a bit more in the front due to the wider axles.

Thanks! The original wheel I wanted was an -18 offset, which was a bit too pokey for me... but I loved the deep dish. Ultimately, I'm looking at a wheel that has as "0" offset, so probably a little less of a poke than yours.

The easiest but not the most fun way to start is to eliminate every wheel that doesn't work based on weight, offset, and backspacing...Unfortunately, that can eliminate many wheels you really like. If done correctly function over form is the first step.
