I like to keep my lights up high when possible, it reduces the chance of them being covered by whatever you're driving in. I say "reduce" because it doesn't prevent it completely. I use the mounts at the base of the A-pillar. Only downside is you do get some glare from the hood but it's not bad...
For that situation try 4HI and disconnecting the sway bar. May take some stiffness out and give you a little relief. Otherwise you're not doing anything wrong, just have to slow down. The other cars you mentioned have IFS.
I use 4LO quite a bit here in CO. Lots of rocks and technical stuff on the trails I visit. 4HI can get annoying when trying to carefully pick a line over stuff with your head hanging out the window lol.

I have an ARB twin mounted in my fender well. But you should def look for something that connects directly to the battery. Duty cycle is also important, the higher the better but it's something to consider.

If you can keep a small bow wave in front of you while crossing, it'll typically lower the water level behind it. So while stationary the water comes above the door sill, moving will make it drop to or below it. It took me a few tries to get the pace right but it works.
I did this trail recently as well in my stock Rubi. It definitely made me want a small lift and 35s, but it also showed me how capable it really is in stock form. It was a fun trail.
