I ran 285/75r17's (34x11.5) on my 2020 Overland on stock sport wheels with a JKS lift, no rubbing when disconnected. I had plenty of room to go to a 35x11.5. I think you should go for it OP.
Teraflex should be able to answer this question. When you call if you get a flaky answer escalate it, they know the exact answer to what spacer the shock needs. If the 1st person you talk to doesn’t want to share ask for someone competent. Tires/fenders are not a factor for the shock...
OP, don't rush the lift. Do it right once! That's a lot of lift for 35's. Find something qualty in the 2 inch range and you'll have a much better ride and longterm outcome with your Jeep and money.

Have you checked your calibration with a GPS? As far as I know dealers in Canada haven’t had the ability to adjust for tire size for a while now.
And common, your tires didn’t improve the fuel consumption that much, that’s a bit unrealistic.
The Sundrider top is def a nice mod that is functional. Not sure that spacing out the stance will give much of a different feel. Ppl bolt so much crap onto Jeeps, take your time adding things instead of just adding things!
You'll be good to go! If you get any rub at full lock when turning you get either turn slightly less or adjust for that. Mine rubs the inner plastic fender at full lock on the passenger side. I can fix this in about 10 minutes but haven't felt the need.
