I looked at Hagerty for our rare "one of 99" Wrangler that we've put a lot into and can't fully insure - they won't touch anything that goes off road, don't even ask.
I've had a hard time finding insurance companies that understand aftermarket modifications. Most haven't updated their "accessory coverage" limits in decades, $5,000 seems to be the norm, but that will barely cover decent shocks these days.
We bought Methods because the steelies got badly bent. A big heavy off road tire is a lot of force to put on that tight bolt pattern of a TJ and steel is just more ductile and prone to bending - especially cheap ones.
The ProComp 15" steelies on the LJ weren't even close to round anymore.
Late October is a great time to be in Moab, but nights will be cold.
Make sure you are up on drone flight rules for BLM and National Park lands. I'm not a drone pilot, but there are areas in Moab where drones are prohibited.
You won't have any problem with the trails you selected, but I would avoid EJS week unless you are coming to Moab specifically for that event. Everything is packed, the trails are a log-jam, and hotels are insanely expensive and you should already have reservations.

That's much easier to do if you don't have to worry about a front diff or driveshaft. You can just build a frame with mounts for both solid axle control arms and tapped holes to mount IFS on a bracket that bolts on. As soon as you have a front diff for 4WD with IFS you will run into clearance...
