35's instead of 33's - Need to Choose A Tire Please Help

I just ordered the 35 x 12.5 x 17 Mickey Thompson Baja Boss MT for my 2023 Rubicon with a 2" AEV space lift. The ratings are superb.

But with a clayton 2.5 lift which is going to be more like a 3-3.5" lift 33" tires are going to look a bit small with how much space you'll have in the fender well.

I have this same setup and think I want to lower it. Probably keep the 12.5x35x17 tires but reduce lift to a 2 inch. Might replace the wheels as I got -12 and it pokes out the wheel well more than I want. I was told that I needed a 3 or 3.5 lift to fit the tires without rubbing. Seems like other here running same size with just 2 inch lift. The JT looks good with this setup but I feel I need climb into and not step into truck now. I put N-Fab Podium steps and those don’t help much. The foot plate seems like in wrong area to easily step and get in truck. Anyone know of a better step that is strong yet has better entry position.
