Looking to get some floor mats for my Gladiator and I prefer the ones that are more rubber than plastic, i also want more of a custom fit dish/pan style vs. just a flat rubber mat. Who do you all recommend that fits that bill?

I thought the Mopar ones were more flat? When i had my unlimited 10+ years ago i had a set that were deep dished so that when snow melted and filled up the floot mat, i could lift it out to dump it...that's the style i'd like again.

Personally i went with the Mopar mats, but i understand your desire. I don't live in an area that snows. The deepest quality mats i am aware of are from WeatherTech:

I have the Mopar and they fit great. The Mopar are plastic not rubber. Take a look at the weather tech. They go up higher on the footwells and offer more protection.

I was interested in the same thing. The Weathertech and the JoyTutus ones, in the amazon link posted earlier, are both made from TPE which is a kind of rubbery plastic. I can't find anything stating the material used in the Mopar mats, but some reviews on Amazon for the Mopar mats commented on how they feel like rubber. I'm leaning toward the Mopar version because of the drain hole.

MOPAR are plastic? They definitely seem like rubber. And yes, as @RJinPV said they have the drain hole plug which is nice.

I live in snow, often wheel in deep snow. No issues for me, they cover everything I need, at least in the front. Back, meh. But I haven't seen much better unless you get one of those 100% replacement things.

So I ordered the JoyTutus ones from Amazon since they were slightly cheaper than the Mopar ones and they look to be identical besides the Jeep logo. They've arrived but i have opened the box and installed them yet. I'll report back this weekend once i check them out!
