Offset and backspacing

2020 Jeep Gladiator Rubicon edition
In ordering a new set of wheels from Discount Tire, the sales guy raised a concern over the choice in regards to sticking out to far from stock. I see alot of you going with -12 offset pushing your tires further out. Would anyone have any issues they would raise with the following choices?

Rubicon
Adding either a Mopar 2" lift or a different aftermarket kit at least that size
37x12.5 - 17 KO2's
Level 8 Strike 17 x 9 offset-0

wouldn't you have to know the width of the wheel in order for that to be accurate?

This is what they say on their web page about wheel width.

Wheel width will effect the tire width by 1/10" on each side for ever 1/2" change in wheel width. This is a small concern unless you plan on running wheel widths that are well outside the manufacturer's recommended range. If you plan on stretching the tires, or running wheel widths that are wider than the width of the tire then you will need to keep in mind that the visualizer is showing tire position not wheel position. In this case the wheel may be closer/further than the calculated distances of key measurements.

Offset is more consistent in determining how much a tire is moving in or out of the wheel well because it is independent of wheel width. Backspacing changes the tire location depending on width.
