Temp Sensor Issue???

Yesterday evening while shutting her down my eye caught something. With the vehicle running or in the run position the coolant temp sensor reads 203 and when I stopped the engine it jumps to 419. I freaked out and started the engine again where I saw it go immediately back to normal, but again when I turn off the engine it went back to 419. Has anyone else seen this?

You know that an instant 200 degree jump is impossible when turning it off. It's just errant data between the sensor and display when it's turned off.

You know that an instant 200 degree jump is impossible when turning it off. It's just errant data between the sensor and display when it's turned off.
The next afternoon when I returned from getting dinner I did the same thing and when the motor was turned off the gauge went grey as it normally did/should.
