What should I monitor?

I ordered a Banks iDash and was wondering what people think are good things to monitor. I have some basics but a lot of them I will be honest, I have no clue what they are.

Regen on/off, scr temp, turbo temp and soot mass load are what I monitor on scan guage. In center dash I keep it on oil temp.
