I have the same tires and am getting around 13-14 mpg right now but gas around here is in the low to mid $2/gallon range and I also dont drive alot and have short commutes.

Being in new york Iam guessing your fuel costs may be a little more. You may consider getting something like an awd suburu or other crossover with decent awd system. You may even consider an EV or hybrid as fuel costs will be high in California as well. The JT is just not a great vehicle for those areas of the country. Then again you could get some used 32" factory wheels and tires for cheap and pick up some mpgs.

If you're willing to switch to car tires to save a few mpg I'm going to assume it's not a wheeling trip. Rent an suv that will get 30mpg or a car that will get 40+. The fuel savings will more than pay for the rental. Even if you need a truck for the trip an ecoboost would save enough to pay for itself and you'd save the wear and tear on the Jeep.

I concur with the rental idea if not a wheeling trip. Either way coming out to Cali any savings will be eaten by fuel prices.

If it is a wheeling trip, fly to your destination, rent a Jeep and wheel, fly back. While I always enjoy wheeling my Jeep; some of my biggest stress is worrying about breaking it or breaking down when you have a long drive back. During my last trip to Moab, I picked up on the fact that the majority of the participants in my group had rented built Jeeps to wheel, then flew back home. I immediately recognized the wisdom of this method.

I ran 315-70-17 Bridgestone Revo 3's on my 22 Mojave and they were smooth, quiet, averaged 18mpg on my 90 mile commute (all 75+mph) and, at the time, weighed less than the stock Mojave 33" Falkens, so never felt a loss of power.
Offroad- not the best tire for mud but it was acceptable for the mild offroading I run
Looks- are subjective to each person, but they looked just aggressive enough to make me happy with how the Jeep looked
Price-Big downside here...they aren't cheap

Make the trip there when there’s little to no wind, then catch a good tail wind on the way back?
I
Set the cruise at 55 mph. 😆
I have General Tire Grabber A/T in 33" and I'm pretty happy with them overall. They do not make a lot of noise and handle well on pavement.

The bigger downside is they discontinued them for a much more tame Ascent tire. Luckily I got a second set right before they discontinued them. Far and away, the best all terrain I’ve ever owned and I’ve had a lot. Fantastic all around tire.

Yanno, I have to chime in one more time having just put around 800 miles to and from Yosemite last week. Some of you may have seen a thread I started about airing down 275/55R20 tires. Anyway, while not much for rock crawling, after my last trip up and over the grapevine, to Yosemite Valley, Beasore Road from Bass Lake and back no less than 75mph I averaged 19mpg which I was very happy with. And I also discovered that those tires make the Nighthawk handle like a sports car on mountain roads. I was very impressed at how well it did with the wide axles and zero body roll. If I were to slow down I could see getting 22-23mpg.
