35x12.5x17 on stock rims?

I have read that I should find a mom and pop shop to mount these. The question I have is has anybody heard of any issues, if so what type? Im not looking to have a problem doing 70mph on the freeway. I will be doing mostly light off roading/overlanding.

I originally mounted my 35-12.50-17' Nitto Ridge grapplers on my stock wheels. No issues whatsoever and Discount Tire did it for me, no questions asked. I did this with a Mopar 2" lift, and TF 1-1/2" leveling kit. It had a very slight LCA rub so I spaced the steering locks out with a single washer on each side. Problem solved in the front. The rear had one single spot on one certain road in a bridge transition that would swoop the bed down far enough I could hear the side wall rub on the cross member through the frame rails, but just barely. I ended up buying wheels after the fact and again had DT dis mount and remount the now 2 month old tires. Long story short, I woulda saved myself about $300 if I would have just bought the wheels and tires as a package. But yes is the answer to your question. The tires will fit on stock wheels and ride just fine.

I have 37x12.5's on stock Rubicon rims, mounted by @Discount Tire . @hawkijon also has 37's on stock and wheels pretty heavily. 35's should be no problem.

I run mine at 29 psi

I had my 37x12.5R16s mounted on my Stock TJ Rubicon rims by CJ Tire, no questions asked.
In fact, the techs loved it. They were psyched to see a non mall crawler.

Just mounted nitto ridge grapplers 35x12.5 on stock wheels on my Rubicon with stock suspension.
I do have some rubbing in front against the fender liner when fully turned on a bump or slightly off camber. Will be doing some cutting this weekend.

No need to cut, well maybe drill. I drilled a 1/4" hole in the fender liner and zip-tied the liner in about 1/2". Did not pull the tie tight no liner rubbing. It is still possible to rub the LCA at locked wheel, since that is at very low speed I didn't even worry about it.
