Ok I know this is counter intuitive However given the amount highway driving I do I want to swap the Stock Rubicon tires out for something more mileage friendly. Eventually I will have a 2nd set of wheels to have for trails and off road but I am assuming the stock tires won't last long as a DD tire....

buy up all the take off of folks going to 35's for half the price.
Thats an option, but logistics would be problematic i.e. shipping, finding low mileage tires yada yada but I will look around.

Assuming you have the MTs, You could get the AT version. Those should last 50k.
Perfect I was just reading about AT tires....

Get a second set of black sport steel wheels. They look good with mud terrains and are cheap. IMO
Ive always been a function over form kinda guy but will look into it...

Have you seen a Rubicon with street tires? Exactly!

My 80 AE came with the Bridgestone 255/70 18 street tires. I ran them for about 4000 miles before swapping out with 285/70 17 tires and wheels. The mpg difference I realized was 1 mpg better with the street treads. In my situation changing out the wheels and tires when and for off roading to gain 1 mpg is not worth the time. You do get a little better ride with the street treads.

I deal with the looks of the Glad on a daily basis and it looks a whole lot better with the more aggressive tread tire!

You'll really like the looks with 37's.

I dont think you realize how much I drive, and 37's won't work. I was going to stick with stock or smaller and swap out when needed. I know its a PITA to do that but for the few times I would do it I can live with it.....

18" overland wheels with street tires are a dime a dozen locally to me on Craigslist.

Also there are so many take offs on this forum and the JLWrangler forum that if you search on your state and adjacent states you will find something in no time.

i went back to stock duelers happily a while back. Now I have 255.75.17 dueler at tires that are a bronco take off. I get 22mpg average on highway driving with my daily commute of 40 miles one way.

Here is the thread where I figure out that they are actually decent.
https://www.jeepgladiatorforum.com/forum/threads/worth-it-to-go-back.47891/

A lot of reviews say the duelers tread life is pretty good. Considering you can get a set fo4 $400 ish right now as a take offs, that makes them very cost effective even if they only last two years.

When you say mileage, are you looking for mpg or a set of tires that will last a long time? From your initial post, it sounds like longevity. It's easy to find some ATs that will last a long time. They'll also increase MPGs a little. Compared to MTs. If you decide you want smaller tires, remember, your speedometer will need to be recalibrated.

You know your situation and what works for you. I actually saved my take offs just in case I get into a situation that the street tires are better suited for specific needs. Whatever you do enjoy your new Gladiator!
