have you used this? If so, what is the process? Do you need two?
You only need one. Simply measure from an equal reference point on each front and back of tire or rim. I always used the inner edge of the rim at the bead, because it's much more consistent and repeatable.

Just one - it's a laser tape measure. Instead of using a physical tape measure you have to have someone hold on the other end, or duct tape it to the tire, you can do this yourself - at one tire pointed to the other.

Not a bad deal and more often than not, you have a line-of-sight between the two wheels/tires at the front and rear.
If nothing else, it's a quicky check if you have made some changes or hit something really hard, whatever.
Here's the one I bought last year after my expensive one died.
Likely the same parts inside.

2025 Rubicon Mojito. Previously -2020 Gobi Sport S (Max Tow)
are they fairly accurate? That would be good to have really for lots of stuff.

Only issue I see doing it from the rim is you are only measuring at about 17" apart . Now if it tells you in degrees thats fine . I prefer to measure about 36" a part when measuring in inches .

Easy enough to get degrees.
Degrees mean the same toe regardless of tire size.
If you are measuring out 36" then you are way off for my stock Mojave tires. It will give you a number in inches much larger than I'd get measuring off the 33" tires.

But then toe should be adjusted according to multiple factors......... tire size and more.

Isnt that what I said , in degrees it dont matter . I figured it was given where you measure depends on the tire size and I doubt any one is running a 17" diameter tire which is what I was referring too when the poster mentioned he measured from the edge of the rim. I doubt their are many people who still have little tires on their rig setting their own toe now that the tie rod is not connected to the Draglingk like the TJs were, meaning their is a lot more you can do to the rig without needing to monkey with the toe
