That is so odd
Not really. I have a High Altitude, which is essentially an Overland with the wide axles and a few other options like the European style mirrors with the working orange signal lights in the outer edge.

I think the NightHawk package with the wide axles is to accommodate the 20" wheel and tire combo offset and nothing more.

That's very possible. The High Altitude came with the 20" wheels and street tires. If I have the wheel full left or right I can hear it rubbing on the front fender liners. I had another cell site visit yesterday and had to make a few very tight turns going up and down the hill.

There are undoubtedly different springs as well, since the payload increases quite a bit with the max tow package.

I think the springs and 4.10 gears are the only things I'm missing out on with a Nighthawk+standard tow package.
Definitely different rear springs. If you install a lift kit with replacement rear springs in a Max-Tow you likely won't get as much lift as listed. In my experience.

Mine too. Mojave has the cooling package, wide axles, 4.10 gears. Not sure why it wouldn't, but it's clear as mud.
Missing the max tow springs, for one. Your suspension is too soft for the maximum towing with the Max Tow package.

I've also heard there can be some difference in the brakes but that might be BS.
Brakes are the same.......

You're missing the heavy duty wide axles.
Wider but so far, the HD part is the same on standard vs. max tow.
They are all listed as HD axles.

Definitely different rear springs. If you install a lift kit with replacement rear springs in a Max-Tow you likely won't get as much lift as listed. In my experience.
I had max tow rear springs under my 2020 JT Overland. The springs were a lot shorter than the overland springs, but the truck sat at nearly the same height (dropped by maybe 1/8"?)
I wasn't expecting a lift out of them, just better handling of 500 pounds of trailer tongue. Meh, went to air bags on my 2022 as the max tow rear springs were disappointing on the Overland.

There's so many threads on "what is in a max tow package" - it's a lot of things, the sum is greater than the individual parts. Tire size was also taken into account - people don't realize that.

I think the NightHawk package with the wide axles is to accommodate the 20" wheel and tire combo offset and nothing more.
What's the tire diameter? The wheels wouldn't matter (unless they were different backset or offset, etc.), but the final tire diameter may.

Definitely, more details than just a quick driveby post can cover. I would expect the springs are different from hardtop and soft top versions. I'm really not surprised that your installation of Max-Tow was disappointing. Now if someone installed them in a base Sport or Sport S and towing trailers or hauling some weight in bed that would be change. Thinking back to when I did a few test drives on JT's (Rubicon stock and lifted, plus others. . . I jumped straight into Max-Tow, knowing that I was going to be towing trailers and hauling with the expected reliability. But, not enough to justify my buying a full size "street queen" pickup with subpar offroad ability. I was disappointed with 2in lift springs in rear (noted in other threads), for a empty bed and no additional stuff the springs might be good.
"This reminds me" I need to re-check all the bolts and nuts again along with control arm end links.
I spoke with Air-Lift on specifically about different airbags of a more correct length and a few emails too. From what we talked about, measurements and photos. I got a different part # kit that would likely be a better choice. (FYI: 60828HD) for anyone interested. I will probably see if I can just order replacement airbags for that kit.
I've got a few projects "due to do" on Monday and over next few weeks so that is more a back burner thing.
