I’m pushing 80k on my 2020 jtr. Fugue it’s time to plan spark plug replacement as normal maintenance. While I’m in there what else would be good to change? Oil cooler? Coils & wires?

Personally, I'd replace spark plugs and any involved seals and put it all back together.
Why? Because the failure rate of the other stuff like the coil packs and so on is extremely low.
I know others will disagree, but I'm currently at about 140,000 miles on the original ignition system of a 4.0 and I've taken coils and other ignition parts well farther than that.
If I did replace coils, I'd go back with the originals as those joke aftermarket things fail a lot more often than the stock parts.

I changed the coil packs on the driver bank when I changed the plugs on my JK because the driver bank is a PITA to get to. You need to remove the upper intake plenum and some vacuum lines. Id recommend at least changing those. Also, not that this will be an issue for you, literally a week after changing my plugs I developed a oil cooler leak which required I take everything back off again plus the lower intake plenum. This was likely due to the cold temps and age, but still. I was at around 100k miles when it happened.

I did the coil packs on my JK also. If you do, don't skimp on them, just buy the Mopar packs.

On my Grand, with the PUG Pentastar, I just did the plugs. You still have to pull the upper intake, just it's now the passengers side that is buried.

With knowledge and a gameplan, you can pull the upper intake in less than 30 minutes. On my JK, I can do it in less than 10 minutes. Yes, I had lots of practice.

If your sensors are ok and the oil cooler is not showing any signs of leaks, leave it be.

I would just worry about the spark plugs and the intake seals only. Coils are low risk on the first scheduled spark plug change and just would inspect the boots and make sure dielectric grease is used.

I swapped plugs on my 2020 Gladiator and it was maybe a 4 hour job going a very leisurely rate the first time. If I had to do it again, I could probably knock it out under 3 hours.
