So far with my Gladiator what I've discovered is that you cannot ask a salesman, they will tell you anything to get the sale. Only the Sport model can be configured for Max tow. It has to do with added weight on the Overland and Rubicon. The max tow has the Rubicon 4.1 wide axle, no other suspension difference. The max tow weight has to do with added weight on Rubicon (heavier skid plate, etc.) cutting into the tow weight.
This, so much. I want to just presume that sales guys are ignorant. Most of the time they have to know everything about every vehicle on the lot, so if you don't get the resident Gladiator expert they're going to just make stuff up to keep the sale moving.

When I need to tow, can I swap on some smaller tires on a Rubicon and get back to a max tow capability close to 7650?

No, there is more to it than just tires...

Why on the overland is the manual heavier than the auto. Every other model has the manual lighter than the auto.
Yeah, that does seem counter-intuitive. I am wonder if it is due to the transfer case and drive shaft changes of going to the manual? I know the Overland automatics have that auto transfer case setup that I would imagine is not the same when going to a manual.
