OP, seems your issue occurred only after shutting the truck off to get fuel, potentially causing heat soak. Then coupled with the thinner air and increased load from going up hill, while towing, likely overheated the turbo/oil
Would recommend just don’t ever shut the truck off during short stops ie getting fuel
(In addition never shut the truck off without first letting it idle for some minutes to cool the turbo after a heavy load, if not already aware)
